The Semi-Soft Cheese


Akkawi
Available Brands: Mabroukeh, Al-Raee, Lara.
Made of 100% fresh cow milk.
Dry matter rate is 50%.
Fat percentage is 45% of dry matter for full-fat kinds, and 25% of dry matter for low-fat kinds.
Salt Percentage is 5%.
This is considered an excellent table cheese, and is eaten fresh after reducing its salt content by soaking in warm water.
The product is filled and wrapped in food-grade shrink bags of approximately 400gms each.
Cypriot Halloumi
Available Brands: Mabroukeh, Al-Raee, Lara
Usually made of fresh cow milk, and from sheep milk (Upon request).
Dry matter rate is minimum 50%.
Fat percentage is 40% of dry matter for full-fat kinds, and 25% of dry matter for low-fat kinds.
Salt Percentage is 3%.
This is considered an excellent table cheese, and could be eaten in a variety of ways:
- Fresh, after reducing its salt content,
- In varied salads, after cutting into small pieces,
- Fried, after cutting into slices.
The product is filled and wrapped in food-grade shrink bags of approximately 400gms each.
